  • Step 1
    Cook the rice according to the instructions on the package (about 10 minutes in a pot of salted water)
  • Step 2
    In the meantime, peel and cut the cucumber into cubes.
  • Step 3
    Wash and cut the tomatoes in half.
  • Step 4
    Mix the cucumber and tomatoes in a bowl. Season with salt & pepper, add a drizzle of olive oil and mix to combine.

    Once cooked, drain the rice.
  • Step 6
    In a hot pan, add a drizzle of olive oil and the shrimp. Cook for 1 minute on medium heat, stirring frequently.
  • Step 7
    Add the teriyaki sauce and cook for an additional 3 minutes, stirring.
  • Step 8
    Add the sesame seeds and stir.
  • Step 9
    Serve the rice, the tomato / cucumber salad and the shrimp on a plate. Add an extra drizzle of sauce and some sesame seeds. Enjoy!
