White rice (long grain)

Raisins

Coconut milk

Curry powder

Raw shrimp (frozen)
1 pinch
Cardamom (ground)

Yellow onion

If you're using frozen shrimp, defrost them by putting them in a freezer bag and placing it in warm water. - Step 2
Cook the rice. When it's done, rinse and drain and set aside. - Step 3
Slice the onion. - Step 4
Roughly chop the almonds. - Step 5
Heat some olive oil in a frying pan. Add the onions and cook for 5 minutes. - Step 6
Add the almonds, raisins, cardamom and half of the curry, mix together. - Step 7
Add the rice, salt, pepper and mix again. Cover and cook on very low heat. - Step 8
In another pan, add the shrimp, and mix with the rest of the curry and the coconut milk. Let it cook for 6 minutes. - Step 9
Serve the rice with the shrimp (Optional: Top with almonds). Enjoy!
