If necessary, defrost the shrimp. In a saucepan of boiling salted water, cook the rice according to the package instructions. Drain it when it's cooked. - Step 2
Meanwhile, heat a drizzle of olive oil in a skillet over medium heat. Add the shrimp, drained pineapple, and soy sauce. Stir and cook for 3 to 4 minutes, until the shrimp are well caramelized. - Step 3
Wash and cut the tomatoes into cubes. - Step 4
Peel and dice the red onions. - Step 5
Chop the cilantro, if you have any. - Step 6
Prepare the tomato salsa. In a bowl, add the tomatoes, onions, and a drizzle of olive oil. Season with salt and pepper, and add the cilantro. Mix everything together. - Step 7
Serve the rice in a shallow dish with the pineapple shrimp and tomato salsa. Season to taste and garnish with cilantro, if you have any leftover. It's ready!
