  • Step 1
    If needed, defrost and peel your shrimp. Put the peeled shallots in the Thermomix, mix for 5 seconds/speed 5 then crape the sides with a spatula.
  • Step 2
    Add a splash of olive oil and the chopped chorizo. Cook for 3 minutes/Varoma/reverse mode/speed 1.
  • Step 3
    Add the rice, white wine and cook for 5 minutes/120°C/reverse mode/speed 1.
  • Step 4
    Next add 150g of water per person, chicken stock cube and cook for 10 minutes/100°C/reverse mode/speed 1.
  • Step 5
    Add in the shrimp, parmesan, salt, pepper and cook for 5 more minutes.
  • Step 6
    Add a bit of butter towards the end of the cooking time, adjust the seasoning and stir for 30 seconds/reverse mode/simmer setting.
