Avocado

Spring mix lettuce

- Step 1
Cut the avocado in half, remove the pit and cut into thin strips. - Step 2
Whisk the eggs in a bowl with a pinch of salt & pepper. - Step 3
Heat a pan on low heat and add a dab of butter then the eggs. Mix using a spatula. Leave a little runny or cook thoroughly depending on how you like your eggs. - Step 4
Serve the eggs with the ham, avocado slices and a small side salad with the dressing of your choice. - Step 5
Optional: Add some chopped chives or other herbs on the eggs. Enjoy!
