Corn (canned)
20 g
Chorizo (cured)
80 g
Scallops (frozen)

1/10 bunch
Chives (fresh)

Lime
1/4 clove
Garlic

Heavy cream

- Step 1
If using frozen scallops, add them to a zippered plastic bag and place it in a bowl of room temperature water. - Step 2
Finely chop the garlic. - Step 3
Cut the chorizo into small pieces. - Step 4
In a pan on high heat, add a drizzle of olive oil and sauté the chorizo and garlic for 2 minutes. - Step 5
Add the scallops and cook for 2 minutes. - Step 6
Lower the heat to medium. Add the corn and heavy cream and cook for 3 minutes. - Step 7
Place in a serving bowl and top with lime zest. Optional: top with chopped chives. Enjoy!
