  • Step 1
    If using frozen scallops, defrost them beforehand by placing them in a freezer bag and putting it a bowl of tepid water.
  • Step 2
    Cook the rice according to pack instructions.
  • Step 3
    Thinly slice the onion.
  • Step 4
    In a hot frying pan with a drizzle of olive oil or a knob of butter, add the onion and fry the scallops for 2 minutes on each side.
  • Step 5
    Add the coconut milk and curry paste and simmer for 1 minute.
  • Step 6
    Put the rice on a plate with the scallop curry. (Optional: add fresh cilantro.) Serve and enjoy!
