  • Step 1
    Defrost the spinach according to the instructions on the package (either in the microwave or in a pan). Make sure to squeeze out all the extra water after its defrosted.
  • Step 2
    Preheat the oven to 180°C. Add the flour and baking powder in a bowl and mix.
  • Step 3
    Add the eggs, salt & pepper and mix to combine.
  • Step 4
    Add the oil and mix. Add the milk and mix until well combined.
  • Step 5
    Incorporate the shredded cheese, crumbled feta (keep some aside for adding to the top of the cake), and drained spinach. Gently mix using a spatula.
  • Step 6
    Pour the batter into a cake pan (greased or lined with parchment paper). Add the remaining crumbled feta. Bake for 50 minutes at 180°C.

    Serve as a snack or meal with a side salad. Enjoy!
