  • Step 1
    Preheat the oven to 200°C. Bring a large pot of water to a boil. After washing the asparagus, trim off the ends.
  • Step 2
    Add the asparagus to the pot of boiling water and cook for 5 minutes.
  • Step 3
    While the asparagus are cooking, unroll the puff pastry onto a baking sheet and poke a few holes using a fork. Bake for 5 minutes at 200°C.
  • Step 4
    In a bowl, mix together the goat cheese, heavy cream, 1 tablespoon of olive oil, salt & pepper.
  • Step 5
    Remove the puff pastry from the oven and delicately spread the goat cheese mixture onto the surface.
  • Step 6
    Lay the asparagus on top of the goat cheese mixture. Please note: If they're very thick, cut in half lengthwise before placing on the tart.
  • Step 7
    Add salt, pepper and a drizzle of olive oil on top of the tart and bake at 200°C for 15 minutes.
  • Step 8
    In a small bowl, mix the pesto with 2 tablespoons of olive oil and set aside.
  • Step 9
    Remove the tart from the oven when it's golden brown. Drizzle the pesto mixture on the tart right before serving. Enjoy!
