  • Step 1
    Peel the carrots & slice into thin rounds.
  • Step 2
    Wash & slice the broccoli into florets. Cut the florets in half or quarters, if needed.
  • Step 3
    Heat a drizzle of olive oil in a pan. Add the veggies and sauté for 2 min on high heat.
  • Step 4
    Reduce to medium heat & add a couple spoonfuls of water to the pan. Cover & leave to simmer for 5-6 min.
  • Step 5
    Once the vegetables are cooked (they should keep their crunch), add in : the cashew nuts, soy sauce, garlic, grated ginger, 1 tablespoon of water per person & 1 teaspoon of sugar (optional). Sauté for another 2 minutes over high heat.
