Sautéed Veggies with Ginger & Cashews

1/2 clove
Garlic

Carrots (fresh)

Broccoli (fresh)

Soy sauce

- Step 1
Peel the carrots & slice into thin rounds. - Step 2
Wash & slice the broccoli into florets. Cut the florets in half or quarters, if needed. - Step 3
Heat a drizzle of olive oil in a pan. Add the veggies and sauté for 2 min on high heat. - Step 4
Reduce to medium heat & add a couple spoonfuls of water to the pan. Cover & leave to simmer for 5-6 min. - Step 5
Once the vegetables are cooked (they should keep their crunch), add in : the cashew nuts, soy sauce, garlic, grated ginger, 1 tablespoon of water per person & 1 teaspoon of sugar (optional). Sauté for another 2 minutes over high heat. - Step 6
