recipe
- Step 1
Wash the cherry tomatoes and cut them in half (or in quarters if they are big). - Step 2
Cook the tomatoes on high heat in a pan with a drizzle of olive oil for 2 minutes. - Step 3
In a pot, bring the milk to a boil. - Step 4
While it's heating, finely chop the garlic. - Step 5
Add the garlic and shrimp to the pan with the tomatoes. - Step 6
Optional: Add one tablespoon of white wine or water per person. - Step 7
Mix, crushing the tomatoes gently, then cover and let simmer on low heat until it's ready to serve. - Step 8
When the milk is boiling, add the polenta, whisking continuously. Cook for about three or four minutes, until the polenta is creamy. - Step 9
Season with salt and pepper, add the grated parmesan cheese, and some extra milk if the polenta is too thick. - Step 10
Serve the polenta into bowls or plates, and then top with the shrimp and tomatoes. (Optional: Sprinkle some chopped basil on top.) Season with salt and pepper to taste, and enjoy!
