  • Step 1
    Wash the cherry tomatoes and cut them in half (or in quarters if they are big).
  • Step 2
    Cook the tomatoes on high heat in a pan with a drizzle of olive oil for 2 minutes.
  • Step 3
    In a pot, bring the milk to a boil.
  • Step 4
    While it's heating, finely chop the garlic.
  • Step 5
    Add the garlic and shrimp to the pan with the tomatoes.
  • Step 6
    Optional: Add one tablespoon of white wine or water per person.

    Mix, crushing the tomatoes gently, then cover and let simmer on low heat until it's ready to serve.

    When the milk is boiling, add the polenta, whisking continuously. Cook for about three or four minutes, until the polenta is creamy.

    Season with salt and pepper, add the grated parmesan cheese, and some extra milk if the polenta is too thick.
  • Step 10
    Serve the polenta into bowls or plates, and then top with the shrimp and tomatoes. (Optional: Sprinkle some chopped basil on top.) Season with salt and pepper to taste, and enjoy!
