White rice (long grain)

1/2 tsp
Turmeric (ground)

1/4 tsp
Curry powder

1/2 pinch
Cumin seeds

10 g
Cashews

1/4
Lemon

- Step 1
In a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain the rice. - Step 2
Heat a drizzle of olive oil in a pan over medium heat. Add the cumin seeds, curry & turmeric. Cook 1 min while stirring. - Step 3
Add the cashews to the pan & continue cooking for another minute. - Step 4
Add the lemon juice & rice to the pan with the spices. Mix well & season with salt & pepper. Continue cooking for 5 min over medium heat. - Step 5
Serve the spicy lemon rice on a plate. Top with coriander if you have some. Re-season to taste & enjoy !
