Sausage with Spinach & Mashed Potatoes

Potato

Andouille sausage (smoked)
80 g
Spinach (frozen)
1 tbsp
Crème fraîche
50 ml
Milk (whole)
20 g
Butter (unsalted)

- Step 1
Peel the potatoes and cut into cubes. - Step 2
Bring a large pot of salted water to a boil and cook the potatoes for 15 minutes, or until fork tender. - Step 3
In the meantime, add the spinach and sausage to a pan. Note: pierce the sausage a few times with a fork. Cook for 10 minutes. - Step 4
Drain the potatoes and mash them in a bowl with the milk, butter, salt & pepper. - Step 5
Serve the spinach and sausage with the mashed potatoes. Add a little bit of crème fraîche or cream to the pan to deglaze and serve the sauce on top. Enjoy!
