Salmon with Mashed Potatoes, Leeks & Corn

- Step 1
If needed, defrost your salmon. Peel and chop the potatoes into cubes (1 to 2 inches). Add them to a microwavable dish with a bit of water. Cover with saran wrap and cook in the microwave on full power for 5 minutes. - Step 2
Meanwhile, wash and finely mince the leeks*. Fry them in a pan with a knob of butter (or olive oil) for 2-3 minutes until they're lightly browned. Add a little water and let it evaporate. *Check out our tips for this recipe - Step 3
Once the water has evaporated, add the strained sweetcorn and the salmon - cook it for 2 minutes on each side, stirring regularly corn and leeks. - Step 4
Remove the potatoes from the microwave, they should be soft. (Put back 2 minutes in the microwave if it is not the case). Mash them using a fork, adding a knob of butter (or olive oil), salt and pepper. - Step 5
Serve the salmon with the mashed potato, leeks and sweetcorn. Season and serve!
