  • Step 1
    If you're using frozen salmon filets, defrost them beforehand by placing them in an airtight bag and immersing them in cold water for 15 minutes.
  • Step 2
    Peel and chop the potatoes into cubes (1 to 2 inches). Add them to a microwavable dish with a bit of water. Cover with saran wrap and cook in the microwave on full power for 5 minutes.
  • Step 3
    Meanwhile, wash and finely mince the leeks. Fry them in a pan with a knob of butter (or olive oil) for 2-3 minutes until they're lightly browned. Add a little water and let it evaporate.
  • Step 4
    Once the water has evaporated, add the strained sweetcorn and the salmon - cook it for 2 minutes on each side, stirring regularly corn and leeks.
  • Step 5
    Remove the potatoes from the microwave, they should be soft. (Put back 2 minutes in the microwave if it is not the case). Mash them using a fork, adding a knob of butter (or olive oil), salt and pepper.
  • Step 6
    Serve the salmon with the mashed potato, leeks and sweetcorn. Season and serve!
