Cook the sushi rice according to the instructions on the packet. When it’s done, rinse in cold water and let it drain in a colander. Set it aside. - Step 2
Then, slice the salmon into thin strips. Do the same with the onions and set aside. - Step 3
Slice the onions into thin strips. - Step 4
Place the rice in a bowl. Add the slices of salmon, some sliced onion, the capers. - Step 5
Add a drizzle of olive oil and a squeeze of lemon, salt and pepper to taste, and serve!
