Coconut milk

Peas (fresh)

Curry paste (green)

White rice (long grain)

Cashews

If needed, defrost your salmon. Remove the skin if you prefer. - Step 2
Cook the rice according to pack instructions. Drain once cooked. - Step 3
In a pot, heat the coconut milk with the curry paste and bring to the boil. Add 1/4 a cup of water per person and mix. - Step 4
Add the peas and salmon. Season, cover and cook on a low heat for 6 to 8 minutes, depending on the size of the salmon. - Step 5
Check the salmon is cooked and remove from the heat. - Step 6
Serve with the rice and some lime juice over the salmon if you have any, and cashew nuts (Optional: cilantro if you have any).
