  • Step 1
    Preheat the oven to 200°C. Place the bacon & salmon on a parchment paper lined sheet tray. Drizzle a bit of oil on the salmon to prevent sticking. Season the salmon with salt & pepper. Roast in the oven for 12-15 min or until the bacon & salmon are fully cooked.
  • Step 2
    Meanwhile, in a small bowl, combine the mayonnaise & pesto. Set aside.
  • Step 3
    Wash & slice the tomato.
  • Step 4
    Remove the salmon & bacon from the oven. Carefully slice the salmon in half.
  • Step 5
    Spread the pesto-mayo onto each slice of toasted bread. To assemble the sandwich, add the bacon, salmon, tomato & lettuce to one slice of bread. Top with the second slice of bread & enjoy!
