To make the hard boiled eggs: Boil water in a large pot, add the eggs and cook for 6 minutes. Drain and put the eggs in an ice bath to stop the cooking. - Step 2
Cut the avocado in thin slices. - Step 3
Toast the bread. - Step 4
Spread the cream cheese on the bread, add the smoked salmon and avocado. - Step 5
Gently peel the eggs, cut them in half and add them to the toast. - Step 6
Top with lemon juice, lemon zest, a drizzle of olive oil, salt & pepper. Enjoy!
