  • Step 1
    Preheat the oven to 180°C. Heat a drizzle of olive oil or a teaspoon of butter in a pan over medium heat. Add the frozen spinach and a drizzle of water and cover. Heat for 5 minutes.
  • Step 2
    When the spinach is defrosted, turn off the heat. Add the crème fraîche or sour cream and grate the garlic on top of the spinach. Season with salt and pepper and mix.

    Unroll the puff pstry sheet. Place the spinach on top, spreading it to form a rectangle in the center of the pastry. Season to taste and place the salmon fillets on top (remove the skin, if necessary).

    Separate the eggs. Brush the edges of the pastry with half of the yolks, lightly beaten. Cut the sides of the pastry into 1/2-inch-wide strips. Fold in the top and bottom, brush with egg, then fold in the strips, alternating from side to side to form a braid.

    Brush the loaf with the remaining egg yolk. Place in a baking dish and bake for 35 minutes at 180°C.

    Remove from the oven and serve with a salad or rice — it's ready!
