  • Step 1
    Wash and cut the eggplants into small cubes.
  • Step 2
    Wash and cut the zucchini into small cubes.
  • Step 3
    Wash and cut the peppers, removing the core and seeds. Cut them into small cubes.
  • Step 4
    Wash and dice the tomatoes.
  • Step 5
    Peel and thinly slice the onions.
  • Step 6
    Peel and finely chop the garlic.
  • Step 7
    Add the onions, garlic, zucchini, peppers, and eggplant to the air fryer basket with the rack. Season with half of the herbes de Provence and a drizzle of olive oil. Season with salt and pepper. Mix well, then cook in the air fryer for 20 minutes at 180°C.

    After 20 minutes, remove the vegetables from the air fryer. Mix them together, then add the tomatoes. Continue cooking in the air fryer for 10 minutes at 180°C.

    Meanwhile, add the salmon to the air fryer basket with the rack. Brush it with a little olive oil, salt, and pepper. Season with the remaining herbes de Provence, then cook it in the air fryer for 6 to 8 minutes at 200°C.

    Meanwhile, heat the mixed grains according to the package instructions.

    Once the vegetables are tender and the salmon is cooked through, remove them from the air fryer.
  • Step 12
    Serve the mixed grains in a shallow dish with the ratatouille and salmon. Season to taste and it's ready!
