Heat the oven to 240°C. Cut the onions and the fennel in half, then strips. - Step 2
Cut the fennel in strips. - Step 3
Chop the sausages into 2-3cm pieces. - Step 4
Place the vegetables ans sausages on a tray covered with parchment or on a baking tray. Add a splash of olive oil, salt and pepper and bake for 15 minutes. - Step 5
Meanwhile, cook the pasta according to pack instructions. Once cooked, strain. - Step 6
Mix the roasted sasuages and vegetables with the pasta and arugula. Sprinkle a bit of parmesan on top, season and add a bit of olive oil. Enjoy!
