Roasted Pineapple with Coconut Ice Cream

Coconut ice cream

- Step 1
Cut the pineapple into quarters. Remove the leaves and peel it before cutting it into 4, 5 or 6 pieces depending on its size. - Step 2
Add the butter to a frying pan on medium heat. Add the sugar and mix. - Step 3
Add the pineapple slices to the pan and pour in the lime juice. Sauté for 3 minutes on each side, basting them in the sauce. Make sure the caramel does not burn. - Step 4
Serve the roasted pineapple on a plate with 1 or 2 scoops of coconut ice cream and lime zest. Serve and enjoy!
