  • Step 1
    Preheat the oven to 180°C. Slice the ends off of the leeks & discard the darker green bits. Cut the leeks into sections & rinse thoroughly to remove all impurities.
  • Step 2
    In a pot of salted boiling water, add the leeks. Pre-cook them for 10-12 min then drain them. Slice each section in half lengthwise.
  • Step 3
    Meanwhile, cut the veggie slices into thick strips.
  • Step 4
    In an oven-proof dish, add the leeks in an even layer. Season with salt & pepper. Add the grated cheese, crème fraîche* & veggie slices. Repeat for another 2 layers before topping the dish off with some extra grated cheese. Bake in the oven for 30 min at 180°C. *Check out our tips for this step
  • Step 5
    Once the roasted leeks with veggie slices are cooked through & golden on top, remove them from the oven. Serve them in a plate with a side of green salad. Enjoy !
