  • Step 1
    Preheat the oven to 240°C. Wash the fennel and cut off the tops and base. Cut the rest into very thin strips.
  • Step 2
    Add the fennel to a baking dish and drizzle with olive oil, salt & pepper. Mix to coat.
  • Step 3
    Cover with aluminum foil and bake at 240°C for 25 minutes.
  • Step 4
    In the meantime, remove the skin of the orange with a knife, and cut into segments.
  • Step 5
    Reserve the juice to use later.
  • Step 6
    Remove the fennel from the oven. Eat hot or cold - up to you! (If eating cold, let cool for 15-20 minutes)
  • Step 7
    Add the fennel, crumbled feta, orange segments and juice, a drizzle of olive oil, salt & pepper to a bowl and mix to combine. (optional: add chopped fresh mint) Enjoy!
