  • Step 1
    Preheat the oven to 200°C. Wash and peel the potatoes and sweet potatoes, chop into 1 inch cubes.
  • Step 2
    Peel and halve the shallots.
  • Step 3
    Put the chicken, potatoes, sweet potatoes, shallots and bouquet garni in a baking dish.
  • Step 4
    Put some small pieces of buter on the chicken. Season with salt & pepper and add olive oil.
  • Step 5
    Bake for 10 minutes at 200°C then lower to 180°C and cook for 1 hour 20 minutes (count approx half an hour per 500g of chicken), turning the potatoes from time to time.
  • Step 6
    Half way through the cooking time, add half a glass to water on top of the chicken. Serve!
