Roasted Cauliflower with Yogurt Sauce

Greek Yogurt (plain)

Lemon

Cumin (ground)

- Step 1
Preheat the oven to 220°C and heat a pan of water while you prepare the cauliflower. - Step 2
With a sharp knife, cut steams off the cauliflower, starting from the base. - Step 3
Put the cauliflower in boiling water with a pinch of salt, and cook for 8 minutes. Strain. - Step 4
Put the cauliflower on a baking tray or dish. - Step 5
Add a drizzle of olive oil. - Step 6
Optional: sprinkle with a bit of sesame if you have some at home. - Step 7
Salt, pepper, then bake for 10 minutes until it is nicely golden. - Step 8
Meanwhile, in a bowl, mix the yogurt, cumin, lemon juice, and a 1 teaspoon of olive oil per person. Season. - Step 9
Serve the cauliflower with the sauce. - Step 10
Optional: add a few coriander leaves. - Step 11
