Andouille sausage (smoked)

Spinach (fresh)

Mixed grains

Preheat the oven to 200°C. Cut the squash into cubes. - Step 2
In a pot of boiling water, cook the mixed grains according to package instructions, together with the squash. - Step 3
Slice the sausage into rounds. - Step 4
Peel and quarter the onion. - Step 5
Add the spinach to the pot with the squash and grains 2 minutes before cooking is done. When the time is up, drain everything together. - Step 6
Transfer the squash, grains and spinach to a small baking dish and add the onion and sausage. - Step 7
Add a drizzle of olive oil, season to taste and mix. - Step 8
Bake for 25 minutes at 200°C. - Step 9
Serve hot!
