- Step 1
Preheat the oven to 220°C/425°F. Wash, drain and finely chop the peppers. Peel and mince the onions. - Step 2
In a frying pan, add a drizzle of olive oil and brown the vegetables over high heat for 5 minutes, stirring regularly. - Step 3
Break the eggs into a bowl, (optional: add chopped coriander), season with salt and pepper, and whisk together. - Step 4
Once the vegetables are cooked, pour them into an oiled pan. - Step 5
Pour the eggs over the vegetables, sprinkle with the ricotta cheese and bake for 10 to 15 minutes. Serve with a green salad, and it's ready!
