Spinach (fresh)

Chives (fresh)

Red onion

- Step 1
Cook the rice according to the instructions on the package. Once cooked, strain and set aside to cool. - Step 2
Cut the avocado in cubes. Finely mince the onion. - Step 3
Add the rice to a plate and top with the spinach, avocado, red onion and shrimp. - Step 4
Add a drizzle of olive oil, lime juice and season with salt & pepper. Optional: add chopped chives. Enjoy!
