Italian pork sausage (ground)
50 g
Cucumber
20 g
Peanuts
1 pinch
Mild chile powder, ground (Espelette)
2 tbsp
Soy sauce

1/10 bunch
Mint (fresh)

- Step 1
Cook the rice noodles according to the instruction on the package. - Step 2
Wash the cucumber and cut it in half the long way. Then cut into thin half moon slices. Set aside. - Step 3
Add a drizzle of olive oil to a pan on medium-high heat and cook the sausage meat, removing the casings, for 4 minutes. - Step 4
Add the peanuts and soy sauce to the pan. Cook for another minute. - Step 5
Drain the noodles. - Step 6
Add the noodles to the pan and mix. Add the chili powder and mix. - Step 7
Serve the noodles in a bowl with the sliced cucumber topped with peanuts. Optional: add some fresh mint leaves. Enjoy!
