  • Step 1
    Cook the rice according to package instructions. Once cooked through, drain & set aside, keeping it warm.
  • Step 2
    Meanwhile, peel and finely chop the onion.
  • Step 3
    Separate the cauliflower into little florets* & wash them. *Check out our tips for this step
  • Step 4
    Heat a drizzle of oil in a pot over medium heat. Add the onion, tomato paste and curry powder (add some cumin if you wish). Cook, stirring, for 2 minutes.
  • Step 5
    Add the red lentils, cauliflower and 15cl (1/2 cup) water per portion. Season with salt and pepper.
  • Step 6
    Add the coconut milk. Stir, cover and leave to simmer for 25 minutes over medium heat, stirring occasionally.
  • Step 7
    Serve the curry alongside the rice. Adjust seasoning to taste and add a few cilantro leaves (optional). Enjoy !
