Red lentils (dry)

Cauliflower (fresh)

70 ml
Coconut milk

1 tsp
Tomato paste

Yellow onion

1 tsp
Curry powder

White rice (long grain)

- Step 1
Cook the rice according to package instructions. Once cooked through, drain it & keep warm. - Step 2
Meanwhile, peel & small dice the onions. - Step 3
Wash & slice the cauliflower into florets. Small dice the stem & slice the florets in half or quarters depending on their size.* *Check out our tips for this step - Step 4
Heat a drizzle of olive oil in a pot, over medium heat. Add the onions, tomato paste & curry powder. Cook for 2 min, stirring. - Step 5
Add the red lentils, cauliflower florets & 150 ml of water per serving. Season to taste & pour in the coconut milk. Stir to combine. Cover & leave to simmer for 25 min, over low heat, stirring occasionally. - Step 6
Serve the red lentil & cauliflower curry in a shallow plat with the fluffy rice. Re-season to taste & enjoy !
