Red Lentil & Cauliflower Curry

Red lentils (dry)

Cauliflower (fresh)
70 ml
Coconut milk
1 tsp
Tomato paste

Yellow onion
1 tsp
Curry powder

White rice (long grain)

- Step 1
Cook the rice according to package instructions. Once cooked through, drain & set aside, keeping it warm. - Step 2
Meanwhile, peel and finely chop the onion. - Step 3
Separate the cauliflower into little florets* & wash them. *Check out our tips for this step - Step 4
Heat a drizzle of oil in a pot over medium heat. Add the onion, tomato paste and curry powder (add some cumin if you wish). Cook, stirring, for 2 minutes. - Step 5
Add the red lentils, cauliflower and 15cl (1/2 cup) water per portion. Season with salt and pepper. - Step 6
Add the coconut milk. Stir, cover and leave to simmer for 25 minutes over medium heat, stirring occasionally. - Step 7
Serve the curry alongside the rice. Adjust seasoning to taste and add a few cilantro leaves (optional). Enjoy !
