Ramen Noodles with Egg & Zucchini

Precooked noodles (ramen)

Zucchini

Nori sheets (roasted seaweed)

- Step 1
Wash & dice the zucchini into cubes. - Step 2
Break the eggs into a bowl. Add the soy sauce & pepper. Whisk everything together. - Step 3
Heat a drizzle of olive oil in a pan over low heat. Add the egg mixture & cook, mixing gently with a spatula. The eggs should remain a little runny, not overcooked. Reserve off the heat. - Step 4
Heat a drizzle of olive oil in a saucepan or Dutch oven over medium heat. Add the zucchini. Add salt & pepper. Cook for 5-6 min. - Step 5
Pour in the hot water, cover & simmer for 10 min. - Step 6
Add the noodles to the pan with the zucchini. Mix well, add the seasoning packet & mix again. Cook for another 2-3 min. - Step 7
Serve the noodles, veggies & broth in a bowl. Add the scrambled eggs and the nori cut into thin strips. Re-season to taste, serve & enjoy!
