Peel & small dice the onions. - Step 2
Slice the avocados in half. Remove the pit & discard the skin. Small dice the avocados. - Step 3
Wash & cut the cherry tomatoes in halves. - Step 4
Prepare the rice according to package instructions. - Step 5
Meanwhile, prepare the vinaigrette. In a small bowl, combine : the lemon juice & 1 tablespoon of olive oil per serving. Season with salt & pepper. - Step 6
In a salad bowl, add : the rice, drained corn, cherry tomatoes, avocado, onions & fresh coriander. Top with the vinaigrette & stir to combine. Enjoy !
