Cut in half, remove the pit and chop the avocado in cubes. Cut the tomatoes in half. Strain the corn and finely chop the onion. - Step 2
Add the corn, tomatoes, avocado, and onions to a bowl. Top with 1 tablespoon of olive oil per person, lemon juice, salt, pepper and the chopped cilantro. Enjoy!
