Bring a pot of water to boil. Peel and slice the carrots very thinly. - Step 2
Plunge them into boiling water and let them cook for 20 minutes. - Step 3
Meanwhile, prepare a second pot of boiling water. Cook the grains according to the instructions on the package. - Step 4
Prepare a third pot of boiling water. Cut the broccoli into florets. If necessary, cut the larger ones in half. - Step 5
Add the broccoli and eggs to the pan and cook for 7 minutes. - Step 6
Drain the broccoli and eggs. Gently peel the eggs. - Step 7
Once the grains are cooked, drain. - Step 8
Once the carrots are cooked, drain them and mash with a fork. Add salt and pepper and a dash of olive oil. - Step 9
Serve the carrot mash with the grains, broccoli and eggs. Season to taste. Enjoy!
