Quinoa Stir Fry with Shrimp

Quinoa (cooked)
100 g
Cooked shrimp (frozen)
200 g
Mixed vegetables (frozen)
1 tbsp
Teriyaki sauce

Green onion (scallions)

- Step 1
If using frozen shrimp, defrost completely. Peel the shrimp if needed. - Step 2
If using, wash & thinly slice the scallion. Separate the white & green pieces. - Step 3
Heat a drizzle of oil in a pan over medium heat. Add the white parts of the scallion & sauté for 1 min. - Step 4
Add the mixed vegetables to the pan. Stir & cook for 2-3 min. - Step 5
Add the shrimp & half of the teriyaki sauce to the pan. Stir & cook until the shrimp is mostly pink, about 3-4 min. - Step 6
Meanwhile, prepare the quinoa according to package instructions. - Step 7
Reduce to low heat & add the cooked quinoa to the pan. Pour the remaining teriyaki sauce in & stir well to combine. - Step 8
Serve the stir-fried shrimp quinoa in a plate. Top with the remaining sliced scallions & re-season to taste. Enjoy !
