  • Step 1
    Wash and cut the cucumber into cubes.
  • Step 2
    Wash and cut the cherry tomatoes in half.
  • Step 3
    Drain and dry the feta with paper towels. Cut it into cubes.
  • Step 4
    In a shallow dish, add the flour. Coat the feta cubes in it.

    Add about 5 to 10 cl of neutral oil to a frying pan over medium heat. The feta does not need to be completely covered by the oil. When the oil begins to sizzle, add the feta and cook for 3 minutes on each side, until golden brown. Set aside on paper towels.

    Meanwhile, heat the quinoa according to the package instructions.
  • Step 7
    Prepare the dressing. In a bowl, mix one teaspoon of olive oil per person with the lemon juice. Season with salt and pepper.

    Serve the quinoa on a plate with the cucumber, cherry tomatoes, and breaded feta. Drizzle the dressing over the top, then add a few basil leaves, if you have any. It's ready!
