Quinoa mix (cooked)

Feta cheese (block)

Cucumber

Cherry tomatoes

Flour (all-purpose)

Wash and cut the cucumber into cubes. - Step 2
Wash and cut the cherry tomatoes in half. - Step 3
Drain and dry the feta with paper towels. Cut it into cubes. - Step 4
In a shallow dish, add the flour. Coat the feta cubes in it. - Step 5
Add about 5 to 10 cl of neutral oil to a frying pan over medium heat. The feta does not need to be completely covered by the oil. When the oil begins to sizzle, add the feta and cook for 3 minutes on each side, until golden brown. Set aside on paper towels. - Step 6
Meanwhile, heat the quinoa according to the package instructions. - Step 7
Prepare the dressing. In a bowl, mix one teaspoon of olive oil per person with the lemon juice. Season with salt and pepper. - Step 8
Serve the quinoa on a plate with the cucumber, cherry tomatoes, and breaded feta. Drizzle the dressing over the top, then add a few basil leaves, if you have any. It's ready!
