Tomatoes (canned, crushed)

Feta cheese (block)
1/2 pinch
Oregano (dried)

- Step 1
Preheat the oven to 200°C. Wash the bell peppers & slice off the top. Clean out the seeds from the center & transfer the peppers to a baking dish. Roast for 15 min. - Step 2
Meanwhile, heat a drizzle of olive oil in a pan, over medium-high heat. Add the ground beef. Stir & cook for 3-4 min, breaking up the meat with a spatula. Season with salt & pepper. - Step 3
Reduce the heat to medium. Add the oregano & crushed tomatoes. Stir & continue cooking for another minute. - Step 4
Add the drained & rinsed chickpeas along with the pre-cooked quinoa. Mix it all together. - Step 5
Reduce the heat to low. Add in two thirds of the feta (leave the rest for garnish). Stir gently for 1 min, then remove from the heat. - Step 6
Remove the bell peppers from the oven. Carefully spoon in the meat mixture until the peppers are fully stuffed. Cover the baking dish with foil & return to the oven for another 8-10 min at 200°C. - Step 7
Remove the peppers from the oven & serve on a plate topped with the remaining feta cheese. Garnish with fresh dill, if you have some & re-season to taste. Enjoy !
