In a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain the rice & set aside. - Step 2
Meanwhile, curt the chicken into pieces. - Step 3
Heat a drizzle of olive oil in a pan, over medium heat. Add the chicken, ground ginger & cumin. Season with salt & pepper & cook for 3-4 min, stirring occasionally. - Step 4
Once the chicken is golden brow, add the tikka masala sauce. Stir & continue cooking for 8-10 min, over low heat. - Step 5
Serve the chicken Tikka Massala with the white rice. Top with fresh coriander, if you have some. Re-season to taste & enjoy !
