Quick & Easy Fish Tacos with Mango Salsa

Flour tortilla (medium)

Fish sticks (breaded)

Bell pepper (red)

Mayonnaise
1/2 tsp
Sriracha sauce

- Step 1
Preheat the air fryer to 200°C (oven to 200°C). Add the fish sticks to the air fryer basket. Cook for 8-10 min (12-15 min in the oven), until golden & crispy. - Step 2
Meanwhile, prepare the mango salsa. Peel & cut the mango into small cubes. - Step 3
Wash & halve the peppers, removing the heart & seeds. Small dice. - Step 4
Peel & small dice the onions - Step 5
Wash & chop the cilantro. - Step 6
In a mixing bowl, add : the mango, bell peppers, onions & cilantro. Drizzle with olive oil & season with salt & pepper. Add a squeeze of lime juice, if you have some & stir to combine. - Step 7
Prepare the spicy mayo. In a second bowl, combine : the mayonnaise & sriracha sauce. Add a splash of water to thin out the mayo & whisk to combine. - Step 8
Heat the flour tortillas in the microwave or in a warm pan. Assemble them by spreading the spicy mayo onto the tortilla. Add the fish sticks & mango salsa. Top with extra spicy mayo, if you have some left, additional coriander & a squeeze of lime juice. Enjoy !
