Fingerling potatoes

100 g
Cherry tomatoes

Cucumber

1/4
Red onion

1/2 tsp
Whole grain mustard

In a pot of salted boiling water, cook the potatoes for 20 minutes. - Step 2
Meanwhile, wash & slice the cherry tomatoes in half.. - Step 3
Wash & small dice the cucumber. - Step 4
Peel & finely mince the onions. - Step 5
If you have some, rinse & finely mince the basil. - Step 6
Prepare the vinaigrette. In a small bowl, combine : the mustard, vinegar of your choice & 1 teaspoon of olive oil per person. Season with salt & pepper. - Step 7
Once cooked through, drain the potatoes. Slice them in halves or quarters, depending on their size. - Step 8
In a salad bowl, add : the potatoes, cherry tomatoes, cucumber, red onion & minced basil. Season with the homemade vinaigrette & toss to evenly coat. Enjoy !
