  • Step 1
    In a pot of boiling water, cook the potatoes for 20 minutes.
  • Step 2
    While the potatoes are cooking, cut the cherry tomatoes in half and dice the cucumber.
  • Step 3
    Mince the red onion and basil (if using).
  • Step 4
    In a small bowl, mix the mustard and olive oil to make the vinaigrette. Use the ratio of one teaspoon of mustard to one tablespoon of olive oil. Add vinegar if desired.

    Once the potatoes are cooked, cut them in half or quarters.
  • Step 6
    In a shallow dish add the potatoes, cherry tomatoes, cucumber, red onion, and basil. Add the vinaigrette and mix well. Enjoy!
