Cherry tomatoes

Cucumber

Whole grain mustard

In a pot of boiling water, cook the potatoes for 20 minutes. - Step 2
While the potatoes are cooking, cut the cherry tomatoes in half and dice the cucumber. - Step 3
Mince the red onion and basil (if using). - Step 4
In a small bowl, mix the mustard and olive oil to make the vinaigrette. Use the ratio of one teaspoon of mustard to one tablespoon of olive oil. Add vinegar if desired. - Step 5
Once the potatoes are cooked, cut them in half or quarters. - Step 6
In a shallow dish add the potatoes, cherry tomatoes, cucumber, red onion, and basil. Add the vinaigrette and mix well. Enjoy!
