  • Step 1
    In a pot of salted boiling water, cook the potatoes for 20 minutes.
  • Step 2
    Meanwhile, wash & slice the cherry tomatoes in half..
  • Step 3
    Wash & small dice the cucumber.
  • Step 4
    Peel & finely mince the onions.
  • Step 5
    If you have some, rinse & finely mince the basil.
  • Step 6
    Prepare the vinaigrette. In a small bowl, combine : the mustard, vinegar of your choice & 1 teaspoon of olive oil per person. Season with salt & pepper.
  • Step 7
    Once cooked through, drain the potatoes. Slice them in halves or quarters, depending on their size.
  • Step 8
    In a salad bowl, add : the potatoes, cherry tomatoes, cucumber, red onion & minced basil. Season with the homemade vinaigrette & toss to evenly coat. Enjoy !
