Pesto Chicken with Cheesy Potatoes & Broccoli

Chicken breast

Potatoes (baked/mashed)
150 g
Broccoli (fresh)

Pesto
1 tbsp
Parmesan (grated)

- Step 1
Preheat the oven to 190ºC. Wash & cut the potatoes into wedges. - Step 2
Wash & cut the broccoli into florets. Slice the florets* in half or quarters depending on their size. *Check out our tips for this step - Step 3
Line a sheet tray with parchment paper or foil. Add the broccoli & potatoes. Drizzle with olive oil & season with salt & pepper. Roast for 15 min at 190ºC. - Step 4
After 15 minutes, remove the tray from the oven. Add the chicken breast & season with salt & pepper. Roast for an additional 20 mins. - Step 5
Remove the tray from the oven. Top the potatoes & broccoli with the grated parmesan. Top the chicken with the pesto. Place back in the oven & roast for another 3-4 mins, until the chicken is fully cooked. - Step 6
Serve the pesto chicken with the parmesan veggies & top with additional parmesan, if desired. Enjoy !
