Chicken breast

Potatoes (baked/mashed)
150 g
Broccoli (fresh)

- Step 1
Preheat the oven to 190ºC. Wash & cut the potatoes into wedges. - Step 2
On a parchment paper lined baking tray, add the potatoes. Drizzle with olive oil & season with salt & pepper. Roast for 15 min at 190ºC. - Step 3
Meanwhile, wash & slice the broccoli into florets. Slice the florets in half or quarters, depending on their size. - Step 4
In a pot of salted boiling water, cook the broccoli for 6 minutes, until tender. Once cooked through, drain the broccoli. - Step 5
After 15 minutes, remove the tray from the oven. Add the chicken breast & season with salt & pepper. Roast for an additional 20 mins at 190ºC. - Step 6
Once the potatoes have crisped up & the chicken is cooked through, remove the tray from the oven. Serve the chicken with the potatoes & broccoli. Top the veggies with grated parmesan & the chicken with pesto. Enjoy !
