  • Step 1
    If using frozen shrimp, defrost completely. Peel the shrimp if needed.
  • Step 2
    Meanwhile, prepare the rice according to package instructions.
  • Step 3
    Halve the pineapple from the stem to the root. Carefully cut around the inside of the pineapple, leaving a 1-2 cm border. Cut the flesh of the pineapple into 2-3 cm cubes. Using a spoon, scoop out the cubes. Discard the center core pieces. Reserve & set aside the remaining cubes along with any juices & the emptied out pineapple halves.

    Wash & thinly slice the scallion. Separate the white & green pieces.

    In a bowl, crack & whisk the eggs.
  • Step 6
    Heat a drizzle of oil in a skillet on medium heat.* Add the white parts of the scallion & sauté for 1 min. *Check out our tips for this step

    Add the shrimp to the skillet & cook until the shrimp is mostly pink, about 3-4 min.
  • Step 8
    Add the mixed vegetables, stir & cook for 1-2 min.
  • Step 9
    Add the cooked rice & stir.
  • Step 10
    Make room in the center of the pan for the scrambles eggs & add another drizzle of oil. Pour in the eggs & stir until the egg is mostly cooked through, about 1 min. Incorporate them into the rest of the rice mixture.

    Add the soy sauce & diced pineapple. Stir to combine & remove the skillet from the heat.
  • Step 12
    Fill the pineapple boat with the fried rice & top with the remaining sliced scallions. Serve & enjoy !
