- Step 1
Wash the peppers, then cut off the tops and remove the center with the seeds. Then slice them into thin strips. - Step 2
Peel the onions and slice them into thin strips. - Step 3
In skillet over medium heat, add a drizzle of olive oil and brown the onions for 2 minutes. - Step 4
Add the peppers and cook for another 5 minutes, stirring frequently. - Step 5
Add the tomato purée and the peas. Add salt and pepper*, and let simmer covered for 10 minutes. *Check out our tips for this step - Step 6
Once 10 minutes have passed, create wells in which to add the egg. Add salt and pepper and then cook covered for 3 minutes. - Step 7
Serve with fresh parsley if desired. Optional: add some crumbled feta for a gourmet twist! Enjoy!
