  • Step 1
    Wash the peppers, then cut off the tops and remove the center with the seeds. Then slice them into thin strips.
  • Step 2
    Peel the onions and slice them into thin strips.
  • Step 3
    In skillet over medium heat, add a drizzle of olive oil and brown the onions for 2 minutes.
  • Step 4
    Add the peppers and cook for another 5 minutes, stirring frequently.
  • Step 5
    Add the tomato purée and the peas. Add salt and pepper, and let simmer covered for 10 minutes.
  • Step 6
    Once 10 minutes have passed, create wells in which to add the egg. Add salt and pepper and then cook covered for 3 minutes.
  • Step 7
    Serve with fresh parsley if desired. Optional: add some crumbled feta for a gourmet twist! Enjoy!
