Peas (frozen)

Feta cheese (block)

Mint (fresh)

- Step 1
Preheat the oven to 200°C. Cook the peas in a pot of boiling salted water, for 8 minutes. Once cooked, rinse well with cold water. Strain. - Step 2
Meanwhile, roll out the pastry onto a baking tray and prick with a fork. Bake for 5 minutes. - Step 3
While it is baking, mince the garlic, add coarse salt and crush it into a purée by pushing down on it, using the knife blade. - Step 4
Finely chop the mint (saving some leaves for garnishing). - Step 5
In a bowl, mix the feta (save around 40g for garnishing), cream, garlic, mint and pepper. Mix until you have a creamy paste. - Step 6
Once the pastry is lightly golden, remove from the oven. Spread on the cream mixture on to the base, add the strained peas, sprinkle on the rest of the feta on top, add some pepper and a splash of olive oil. - Step 7
Bake for 15 minutes. Once it's cooked, add some mint leaves on top and serve.
