Pasta with Marinara Sauce

Pasta (pappardelle)

Tomato

Yellow onion

1/4 clove
Garlic

20 g
Parmesan

- Step 1
Peel & thinly slice the onions. - Step 2
Heat a drizzle of olive oil in a pan, over medium heat. Add the dices onions & grated garlic. Sauté for 2-3 min, stirring. - Step 3
Meanwhile, wash & slice the tomatoes into large cubes. - Step 4
In a blender, add : the tomatoes, the onion / garlic mix, dried oregano & a drizzle of olive oil. Season with salt & pepper. Blend until smooth. - Step 5
In a pot, add the marinara sauce. Leave to simmer & reduce for 15 min, over medium heat, stirring occasionally. - Step 6
Meanwhile, in a pot of salted boiling water, cook the pasta according to package instructions. Once cooked through, drain the pasta. - Step 7
Transfer the drain pasta into the pot with the marinara sauce. Stir to evenly coat & continue cooking for 1-2 min. - Step 8
Serve the pasta marinara in a bol or a plate topped with parmesan shavings & fresh basil, if you have some. Re-season to taste & enjoy !
