Cod (fresh)

Bread crumbs (plain)

Parmesan (grated)

- Step 1
If needed, thaw your cod. Preheat your oven to 200°C. Peel the carrots, then cut them into wedges. - Step 2
Wash the potatoes, then add them with the carrots to a baking tray covered with baking paper. Add a drizzle of olive oil. Salt, pepper, then mix using your hands. Bake for 20-25 minutes at 200°C. - Step 3
Meanwhile, if your butter is not soft, soften it in a saucepan or in the microwave. - Step 4
In a hollow container, mix: the soft butter, the parmesan and the breadcrumbs. Salt and pepper, then mix with your fingertips until you obtain a sandy paste. - Step 5
After 20 minutes of cooking, remove the baking tray from the oven and add the cod fillets. Then distribute the crumble over the cod fillets. Bake again for 15 minutes at 200°C. - Step 6
Serve the cod in a crust with the roasted vegetables and tartar sauce (optional). Sprinkle everything with chopped chives, if you have any. Enjoy!
