Parm Crusted Cod with Roasted Veggies

Cod (fresh)

Bread crumbs (plain)

Butter (unsalted)
20 g
Parmesan (grated)

Fingerling potatoes

- Step 1
If needed, defrost your cod. Preheat your oven to 200°C. Peel the carrots, then cut them into wedges. - Step 2
Wash the potatoes, then add them with the carrots to a baking tray covered with baking paper. Add a drizzle of olive oil. Salt, pepper, then mix using your hands. Bake for 20-25 minutes at 200°C. - Step 3
Meanwhile, if your butter is not soft, soften it in a saucepan or in the microwave. - Step 4
In a hollow container, mix: the soft butter, the parmesan and the breadcrumbs. Salt and pepper, then mix with your fingertips until you obtain a sandy paste. - Step 5
After 20 minutes of cooking, remove the baking tray from the oven and add the cod fillets*. Then distribute the crumble over the cod fillets. Bake again for 15 minutes at 200°C. *Check out our tips for this step - Step 6
Serve the cod in a crust with the roasted vegetables and tartar sauce (optional). Sprinkle everything with chopped chives, if you have any. Enjoy!
