Pappardelle with Smoked Salmon and Leeks

Pasta (pappardelle)

Crème fraîche

Leeks
1 slice
Smoked salmon

- Step 1
Trim the ends of the leeks* & slice the white part into thin rings. Place the leeks in a fine-mesh sieve & rinse thoroughly under running water. *Check out our tips for this step - Step 2
Melt a knob of butter in a pan. Add the drained leeks & saute for 2 minutes, on high heat, stirring regularly. - Step 3
Reduce heat to medium-low. Cover & leave to simmer for 5 minutes. - Step 4
Meanwhile, in a pot of salted boiling water, cook the pasta according to package instructions. - Step 5
After 5 minutes, check the leeks. Add the crème fraîche & season with salt & pepper. Cook for another 5 min. - Step 6
Once the pasta is cooked, drain it & add it to the pan with the leeks. Re-season to taste & stir to combine. - Step 7
Add the slices of smoked salmon cut into small pieces into the pan. Stir to combine. - Step 8
Serve the salmon & leek pasta in a bowl or a plate. Re-season to taste & enjoy !
