Zucchini

Greek Yogurt (plain)
1/5 bunch
Parsley (fresh)
1/2 clove

- Step 1
Heat a pot of water. Wash, peel and slice the potatoes in half circles (around 1cm). Once the water is boiling, add them to the pot with a pinch of salt. Cook for 8 minutes. - Step 2
Meanwhile, finely mince the garlic, wash and slice the zucchini in half circles (around 1cm). Roughly chop the chicken. - Step 3
Add the garlic, zucchini and chicken to a pan with olive oil and cook for 5 minutes. Add the potatoes (once they're cooked and strained) for 5 minutes until the vegetables are lightly golden. - Step 4
Meanwhile, mix the yogurt with the chopped parsley, salt, pepper and a bit of olive oil. - Step 5
Serve the chicken and vegetables with the sauce on top. Season and enjoy!
