Brussels sprouts (fresh)

Pancetta (cubed)

- Step 1
Trim the stems from the sprouts and halve them lengthwise. Place them in a colander and rinse well. - Step 2
In a large pot of salted boiling water, cook the sprouts, covered, for 8 minutes. (If using frozen sprouts, cook for 6 minutes.) - Step 3
When the sprouts are done (the tip of a knife should slide in easily), drain well. - Step 4
In a hot pan, add the lardons and sprouts and brown over medium-high heat for 5 minutes, stirring frequently. Season with salt and pepper. - Step 5
For extra-tasty (but OK, less healthy) sprouts, add a dab of butter to the pan. ;) - Step 6
Serve, it's ready!
