  • Step 1
    Prepare the rice noodles according to the package instructions.
  • Step 2
    To make the sauce: Mix the soy sauce, peanut butter, 1 teaspoon of sugar per portion, and the juice of the lime in a small bowl.
  • Step 3
    Cut the chicken into bite-size pieces.
  • Step 4
    Drain the rice noodles.
  • Step 5
    Heat a drizzle of vegetable oil in a pan over medium-high heat. Add the minced or grated garlic and the chicken and sauté for 4 minutes.

    Add the noodles, the bean sprouts, and the sauce. Lower the heat to medium and stir-fry for 2 minutes.
  • Step 7
    Serve hot. (Optional: Top with some crushed peanuts, bean sprouts, and fresh cilantro.) Dig in!
